So I didn't quite make this one up. It came from one of my many vegetarian cookbooks. However, because I don't have a food processor (which I would love one day) I had to improvise.
Here are the basics:

Red Chili Tofu with Coconut-Scallion Rice
rice cooked with a combo of coconut milk and water
     garden fresh scallions added in last
fried tofu chunks
steamed broccoli
a sauce made of:
   fish sauce
   oil
   minced garlic
   dried cilantro (didn't have fresh)
   lime zest
   sriracha
   finely chopped peanuts

Oh so yummy. Boy sure is lucky that I left him some for his lunch break =)

Meal Invention #2

We're getting pretty good at this thing. We bought some Quorn brand "meatballs." We love the other products, so figured we'd give the meatballs a try. Not great, but not terrible. We came to the consensus that we probably won't purchase them again unless something that calls for meatballs sounds irresistible.

Pasta with Vegetarian Meatballs in a Mushroom Sauce
spaghetti (any kind)
1 package Quorn meatballs
dried mushrooms
shallot (1)
garlic (1)
onion (used red cause our yellow was bad)
cream of mushroom soup (1)
parmesan cheese

this recipe was a little on the rich and creamy side. Maybe next time we'll try our own white sauce, or only use half the can of soup.

Meal Invention #1

So I love to cook. And I love to come up with new recipes. The boy and I are great at it. I need somewhere to store my creations, and what better place than here? That way others can read them (and perhaps try them).

Roasted Beet and Shallot Couscous
roasted beets (2) - roasted with olive oil and s&p
couscous (1 cup)
shallots (2)
garlic (1)
orange zest
chives and parsley
cotija cheese

Gotta try it with other cheese, but its great!
